Place the apple pieces in a small bowl and add the cinnamon, lemon juice and 1 teaspoon of coconut sugar. Leave to macerate while you make the batter.

Place the milled flaxseed in a small bowl with 3 teaspoons of water and leave to absorb for 5–⏱️ 10 minutes.

Place the milled oats, coconut sugar, baking powder, bicarbonate of soda and soaked flaxseed in a bowl and whisk to remove any lumps.

Add the oat milk and whisk to combine.

Place a frying pan over medium heat. Add a small amount of coconut oil and once melted, add spoonfuls of the pancake mix. This recipe provides enough for 3 small or 2 medium pancakes. Sprinkle over the macerated apple pieces, reserving some for garnish. Once the pancakes have cooked on one side, flip them over and cook the other side — they usually take about ⏱️ 2 minutes per side.

Serve the pancakes piping hot with a spoonful of coconut yoghurt, the reserved apple pieces and a drizzle of maple syrup.
