This apple and ginger shrub is the perfect non-alcoholic cocktail or refreshing drink for the festive season. At Deliciously Ella HQ, we love serving it over ice and topping it up with soda water. It also makes a fantastic homemade gift; simply decant it into a sterilised bottle and decorate with a ribbon.

📝 Preparation Steps

Place the ginger in a small saucepan, pour over 750ml boiling water and bring to the boil. Remove from the heat and steep for 10–⏱️ 15 minutes.

Pour the apple cider vinegar and maple syrup into the Kilner jar and whisk together; add the apple.

Pour the water and ginger into the jar. Put the lid on and set aside to cool. Store in the fridge for 24–⏱️ 48 hours.

To decant, strain the liquid through a fine sieve and pour into a sterilised bottle. Store in the fridge for up to a week. We love this served with ice, soda water and a sprig of rosemary.
