Artichoke & Spinach on Toast
This artichoke and spinach dip is a deliciously simple lunch to serve on toast. The marinated artichokes are blended together with wilted spinach, roasted garlic cloves, lemon juice, butter beans and almond butter to create a chunky, flavoursome dip.

Firstly, place the spinach into a bowl and cover with boiling water; leave to wilt for a couple of minutes.

Place the artichokes (plus 2 tablespoons of oil from the jar), garlic cloves, butter beans, almond butter, lemon juice, 1 tablespoon of almond milk and a large pinch of salt into a powerful blender and blend until it comes together but is still a little chunky. You may need to add an extra splash of almond milk as you go.

Drain the spinach and add into the blender. Pulse a few times to break down the spinach but not completely blend it through.

Once ready to serve, toast the bread and then pile the artichoke and spinach spread on top. Finish with a crack of black pepper and a sprinkle of fresh parsley.
