Blueberry Waffles
These blueberry waffles are an easy breakfast if you want something more indulgent. They’re so delicious with our blueberry compote and a dollop of coconut yoghurt.

Preheat a waffle iron and once warm, add a little coconut oil to grease each waffle mould.

Place the porridge oats in a food processor and pulse until it becomes a fine powder.

Then add the chia seeds, maple syrup, almond milk, buckwheat flour and coconut oil. Pulse until the mixture comes together to form a thick batter.

Once combined, stir through the blueberries and spoon equal amounts of the mixture into the waffle iron, smoothing out to ensure the waffle mould is filled.

Close the iron and cook for around 5–⏱️ 10 minutes until golden.

Once cooked, remove the waffles and repeat until the mixture is finished. These are delicious served with a big dollop of our blueberry compote or some fresh blueberries.
