Buckwheat Crêpes With Roasted Red Pepper, Olives & Hummus
We made these crêpes in the office recently and everyone was pretty obsessed. They're so delicious served with some hummus and a large handful of fresh rocket.

Preheat the oven to 190C (375F), fan setting.

To make the topping simply place the red peppers into a baking tray and mix with olive oil and a pinch of salt. Mix well before cooking for ⏱️ 10-15 minutes until charred on the outside and cooked through. Remove and leave to one side until ready to serve.

To make the crêpes, stir all of the ingredients together to form a smooth batter.

Warm some olive oil in a pan over a medium heat and add a few large spoonfuls of the batter into the pan, we usually cook about one third of the mixture at a time. Cook on each side for ⏱️ 3 minutes until golden and delicious.

Repeat this process with the rest of the batter until it is all used up and you have all of your crêpes, it usually makes around 3 depending on the size you’re making.

Once ready to serve, pile the crêpes high with a large dollop of hummus, some fresh rocket, roasted red pepper and a sprinkle of black olives.
