Butter Bean Mash
This is the most delicious mash possible. The butter beans become so rich and creamy, and taste amazing mixed with rosemary, thyme and garlic.

Place a pan over a medium heat and add a drizzle of olive oil. Once warm, add the garlic and a pinch of salt. Mix well and cook for a couple of minutes to soften.

Once the garlic has softened, add the drained butter beans, dried herbs and lemon juice and cook for another ⏱️ 10 minutes.

Add a dash of almond milk, the apple cider vinegar and mustard. Mix well and cook for another ⏱️ 5-10 minutes until everything feels soft.

At this point, remove from the heat and mash the mixture using a fork until everything comes together.
