Heat a drizzle of olive oil into a large, heavy bottomed pot. Add the onion, garlic, celery, carrots, ginger and chili with a pinch of salt. Sauté ⏱️ 12-15 minutes until softened and reduced, stirring occasionally to prevent sticking.

Add the turmeric, stir well and allow to cook for one minute before adding the butterbeans, coconut milk and miso. Fill up one of the empty tins with water and add this to the pan. Bring to a gentle simmer, cover with a lid and leave to bubble gently for about ⏱️ 20 minutes, until everything is completely cooked and tender. (The softer the vegetables are at this stage, the creamier the finished soup.)

Blend until smooth and creamy. Stir through the lemon juice and adjust seasoning to taste.
