Cinnamon Buns
A weekend favourite, these cinnamon rolls are light and fluffy and packed with a sweet spiced filling. Make sure to roll the dough tightly to create a perfect spiral. Serve with or without the drizzle, either way, these baked beauties are sure to impress.

Place the flour and 20g sugar into a large bowl, adding the yeast on one side of the flour, and the salt on the other and mix to combine (this stops the salt killing the yeast).

Mix the oat milk, 60g coconut oil, 75ml maple syrup and vanilla in a small saucepan and heat until the oil melts, (don’t let it boil). Pour into a bowl and leave to cool until it’s tepid.

Gradually mix the wet ingredients into the dry, until you have a dough that’s slightly wet. Knead until the dough is elastic and smooth, 8–⏱️ 10 minutes. Cover and leave to prove in a warm space, until doubled in size, about ⏱️ 1 hour. Once that’s nearly ready, line a 30 x 25-cm deep baking dish with non-stick paper.

To make the filling, melt 20g coconut oil and mix in 1 tablespoon maple syrup; set aside. Then combine the coconut sugar and cinnamon in a small bowl.

Lightly dust a clean work surface with a small amount of flour and roll out the dough into a 45-by-35cm rectangle. Brush the dough with the maple-oil mixture and evenly sprinkle over the cinnamon sugar all the way to the edges.

Roll the dough up from the shorter side into a tight spiral, placing the seam at the bottom. If you want a neat spiral, cover and place in the freezer for ⏱️ 15 minutes, this isn’t essential. Using a sharp knife cut into 12 slices. Arrange the slices 2cm (3/4 -inch) apart into the lined baking dish, cover and leave to prove (proof) for ⏱️ 1 hour.

Heat oven to 200°C / 180°C fan / 400°F and bake, until golden, 25–⏱️ 30 minutes. Remove from oven and brush the buns with maple syrup to glaze.

If you’d like to put some ‘icing’ on top, simply mix the coconut yoghurt and 3 tablespoons maple syrup together in a small bowl and spoon or brush it on top of the cooled buns.
