Coronation Chickpea Salad Bowl
Our curry infused, creamy coronation chickpeas are a satisfying addition to this colourful salad. We think this bowl is the perfect summer lunch, Jubilee year or otherwise.

Preheat the oven to 190°C/ 170°C fan / 375°F.

Place the chopped sweet potatoes on a baking tray, drizzle with olive oil and toss to coat. Sprinkle with salt and place into the oven for ⏱️ 15-20 minutes, until soft and turning brown in parts.

While the sweet potatoes are cooking make the coronation chickpeas. Place the chickpeas, coconut yoghurt, curry powder, apricots, spring onions and mango into a large bowl. Stir to combine, adding a splash of water if necessary to loosen and add salt to taste.

For the ginger tahini dressing place the tahini, ginger, lemon juice, maple syrup and boiling water into a medium bowl, whisk to combine. Add salt to taste.

To assemble the salad place portions of the coronation chickpeas, roasted sweet potatoes, and red cabbage and spinach into 2 serving bowls. Drizzle with ginger tahini dressing and sprinkle with sesame seeds and fresh chili before serving.
