Place the potatoes into a saucepan large enough to hold them and cover with cold water. Add a generous pinch of salt and place over medium heat. Bring to a gentle simmer and cook for 15–⏱️ 20 minutes until the potatoes are just beginning to fall apart. Drain in a colander and leave to dry; let them sit for about ⏱️ 5 minutes until the edges begin to turn white. The drier the potatoes, the more liquid they will absorb once mashed, meaning more flavour.

While the potatoes are drying, pour the oat milk and olive oil into the same saucepan and place over a low heat. Cook for 2–⏱️ 3 minutes until just warmed.

Once the potatoes are sufficiently dry, tip them into the pan with the milk and mash well using either an electric whisk or a potato masher. Adjust seasoning to taste.
