Creamy Tofu Rice Bowl
Oven-baked tofu with brown rice, red onion and a mix of red and yellow peppers, finished with fresh spring onions and a sweet and sour sauce — this is a great midweek supper, full of flavour and nourishing ingredients.

Preheat oven to 200°C fan / 425°F. Drain the tofu and pat dry before cutting into bite-sized chunks. Place on a baking tray and drizzle with olive oil and a sprinkling of salt. Mix well and cook in the oven for ⏱️ 25 minutes.

While the tofu is cooking, cook the rice according to packet instructions. Once cooked, drain any excess water and place into a large mixing bowl.

In a small bowl, mix together the sauce ingredients until smooth, adding a splash more almond milk (or water) if it becomes too thick.

Place a pan over medium heat and add a drizzle of olive oil. Once warm, add the red onion and a pinch of salt. Mix well and cook for 5–⏱️ 10 minutes before adding the peppers. Cook for another 5–⏱️ 10 minutes, before mixing through the cooked rice, sauce and ½ of the sliced spring onions. Mix well to ensure all of the rice is coated (you may want to add a dash more almond milk to make the sauce really smooth).

Once the tofu is cooked, remove from the oven and mix through the rice. Top with the rest of the sliced spring onions, red chilli and coriander. Serve with some extra lime wedges on the side.
