Drizzle the oil into a large frying pan over medium heat, add the onion and fry for 8–⏱️ 10 minutes until softened. Tip in the garlic and tomato purée and fry for ⏱️ 30 seconds until it smells fragrant.

Add the butter beans, chopped tomatoes and 50ml / 1.7 fl oz water into the pan, bring to the boil; then turn down the heat and simmer until slightly reduced. To finish, stir in the vinegar and maple syrup, along with a pinch of salt and crack of black pepper. At this point, you can also add some harissa or chipotle paste, to taste. Serve on toasted sourdough.
