Place a large heavy-bottomed saucepan over medium–high heat and add 1 teaspoon of olive oil. Add the asparagus and sauté for 2–⏱️ 3 minutes, until bright green. Remove the asparagus from the pan and set aside to cool.

Place the saucepan back over the heat, add the cashews, carrot, potato, onion, celery, garlic and 750ml / 1¼ pints of water. Bring to a boil, then reduce heat and allow to simmer for 12–⏱️ 15 minutes until all the vegetables are tender.

Transfer the contents of the pan to a blender. Add the nutritional yeast, mustard, juice of ½ a lemon and season with salt. Blitz until smooth.

Tip the sauce into a saucepan, add the orzo and cook for 15–⏱️ 18 minutes until the orzo is soft with a little bite. Stir through the oat milk in stages during cooking to stop the sauce from getting too thick. Then tip in the asparagus and peas; stir until the peas have defrosted and asparagus is heated through, adding a splash of a water to loosen.

While the orzo is cooking, make the breadcrumb topping by heating 2 teaspoons olive oil in a heavy-bottomed frying pan over medium–high heat. Add the pieces of bread and fry, tossing occasionally, until golden and crunchy. Remove from the heat.

Before serving, finely slice the basil. Squeeze the remaining ½ lemon over the top of the pasta, then scatter with the basil and breadcrumbs; season with salt and pepper and enjoy while hot.
