Harissa & Almond Pearl Barley Salad
Crunchy roasted almonds, garlicky tomatoes, soft pearl barley and fresh herbs are mixed together with a drizzle of olive oil and balsamic vinegar to create this delicious salad. We love to enjoy it as a side or on its own with a dollop of sun-dried tomato hummus.

Bring a pan of salted water to the boil. Once boiling, add the pearl barley and the veggie stock cube. Cook for 10–⏱️ 12 minutes until the pearl barley is soft. Once cooked, leave to cool a little before draining the water and spooning the pearl barley into a bowl.

While the pearl barley cooks, place a pan over medium heat and add a drizzle of olive oil. Once warm, add the halved tomatoes, garlic and a pinch of salt. Mix well and cook for 5–⏱️ 10 minutes until the tomatoes soften. At this point, remove from the heat and spoon into the bowl with the pearl barley using a slotted spoon.

Add the chopped parsley, almonds, mint, lemon juice, harissa paste, spring onions, another drizzle of olive oil, balsamic vinegar and a pinch of salt to the bowl. Mix everything together really well before serving.
