Harissa Stuffed Sweet Potatoes
These harissa stuffed sweet potatoes are a great midweek dinner. Roasted in the oven, the soft sweet potato is then mixed together with chickpeas, harissa paste, lime juice and tahini to create a delicious stuffed potato.

📝 Preparation Steps

Preheat oven to 190°C (fan) / 375°F.

Prick a few holes into each sweet potato and place on a baking tray. Cook for ⏱️ 45 minutes until soft.

After ⏱️ 45 minutes, remove from the oven and cut each sweet potato in half lengthways. Scoop out the soft flesh and spoon into a large bowl.

Add the harissa paste, lime juice, tahini, drained chickpeas and a pinch of salt. Mix well, before spooning back into each sweet potato half.

Return to the oven and cook for another ⏱️ 10 minutes before serving with a sprinkle of coriander and chilli flakes.
