Heat the oil in a small pan over medium heat; add the onion and a pinch of salt and pepper. Cook for 5–⏱️ 10 minutes until soft.

Add the cumin, thyme, rosemary, bouillon powder and a pinch of black pepper. Stir well and cook for 1–⏱️ 2 minutes.

Add the flour and mix well. Then stir in the water and tamari.

Leave to simmer for 15–⏱️ 20 minutes until the gravy reaches your preferred thickness — the longer you simmer it, the thicker the gravy will become. If it becomes too thick, simply add a dash of water and heat through again.
