High Protein Veg Bread
We developed this loaf as a ‘ready meal’ - something that would be filling and delicious and a vehicle for any other bits you feel like having. We serve it for breakfast with sauteed tomatoes and spinach, then have some for lunch with a variety of side salads. It also makes the perfect accompaniment to a bowl of soup. As this mix contains vegetables it is quite wet. Make sure they are thoroughly defrosted and drained to avoid adding too much moisture. Also be sure that your oven is completely preheated or it may affect the end result.

Grease and line a 2lb loaf tin with parchment. Preheat oven to 160°C fan/ 180°C.

In a small bowl, mix together the 2 tablespoons of ground flax seeds with 6 tablespoons of water. Leave to absorb. It should look gloopy and cohesive after about ten minutes.

Place the gram flour, plain flour, oats, baking powder, bicarb, salt, paprika, cumin, coriander and nutritional yeast in a large bowl and mix well to combine and remove any lumps.

Add the oat milk, olive oil, onion, peas, sweetcorn and flax to the dry ingredients, and stir well to combine.

Pour the batter into your prepared loaf tin and bake in your preheated oven for ⏱️ 55-60 minutes, or until a skewer inserted comes out clean.

Remove from the oven and loaf tin and allow to cool completely before serving.
