Put the water, lemon peel and slices, cinnamon sticks, chilli and ginger into a saucepan and bring to the boil. Cover and leave to infuse for 3–⏱️ 4 minutes until the tea reaches your preferred level of spice. Add the maple syrup to taste and serve.
