Preheat the oven to 160°C fan / 350°F. Line a 1kg / 2lb loaf tin with baking parchment. In a small bowl mix the flaxseed with 6 tablespoons of water; set aside for ⏱️ 10 minutes to thicken.

Tip the courgette into a clean tea towel and squeeze out as much liquid as you can; set aside.

Sift the flour into a large bowl, then stir in the ground almonds, baking powder, salt and coconut sugar.

Pour in the olive oil and soya milk, fold together until just combined. Add the courgettes, lemon zest, lime zest and flaxseed mixture, and briefly mix together; pour the batter into the tin (it will be quite thick) and decorate with the flaked almonds.

Bake for 70–⏱️ 80 minutes, until golden and a skewer inserted into the middle comes out clean. Cool in the tin for 15—⏱️ 20 minutes before slicing. Delicious with a cup of tea or coffee.
