Put a large saucepan over medium heat and add the olive oil, carrots, celery and onion. Cook for ⏱️ 5 minutes until softened slightly. Add the garlic, ginger and spring onions and fry for ⏱️ 30 seconds until fragrant.

Pour in the stock and bring to a boil. Turn down to a simmer and add the green lentils. Simmer for ⏱️ 10 minutes until reduced slightly and the vegetables are soft. Add the lime juice, soy sauce and chilli, plus a pinch of salt.
