To make the spicy beans, place the oil and onion into a large frying pan and fry for 5–⏱️ 8 minutes until soft. Add the garlic, chilli flakes and paprika; fry for ⏱️ 30 seconds until fragrant. Tip in the chopped tomatoes and 100ml water, along with the beans and simmer for ⏱️ 5 minutes until the sauce has thickened.

When almost ready to serve, make the polenta. Firstly, in a saucepan, bring the vegetable stock to the boil. Place the polenta and the boiling vegetable stock into a large saucepan and simmer for 5–⏱️ 8 minutes, stirring until thickened; it should have the consistency of porridge and fall off the spoon. Stir in the nutritional yeast (if using) and a generous pinch of sea salt and crack of black pepper.

To serve, spoon the polenta in the bottom of a bowl and top with a hearty spoonful of the spicy beans.
