Portobello Mushroom & Butter Bean Traybake
Portobellos give any recipe such depth with their wonderfully rich, mushroomy flavour. In this 20-minute traybake, they’re roasted with crushed garlic, balsamic vinegar, herbs, butter beans and broccoli; then sprinkled with crushed walnuts for a little crunch.

Preheat oven to 190°C (fan) / 375°F.

Place the whole mushrooms, garlic, drained butter beans, herbs, balsamic vinegar and broccoli in a large baking tray; drizzle with olive oil, season with a sprinkle of salt, then mix well. Roast in the oven for ⏱️ 10 minutes.

After ⏱️ 10 minutes, remove from the tray from the oven and sprinkle the chopped walnuts over the mushrooms and beans. Then return the tray to the oven and cook for another 5–⏱️ 10 minutes, until the mushrooms soften and the walnuts are golden. Serve in bowls, seasoned with a pinch of black pepper
