Red Pepper Gazpacho
This gazpacho is the perfect chilled and refreshing soup to enjoy on hot days. The flavour is rich and creamy, with the heartiness of the butter beans and the freshness of the red peppers. We love to top it with fresh tomatoes, spring onions and black pepper, but it also tastes delicious topped with coconut yoghurt or drizzled with olive oil.

If you are using red peppers from a jar, start by draining them. If you’re using fresh red peppers, preheat the oven to 200C (390F), fan setting. Place the red peppers onto a baking tray and drizzle with olive oil and a pinch of salt. Cook for ⏱️ 20-25 minutes, turning throughout to ensure all sides cook. Once cooked, remove from the oven and leave to cool.

Place all of the gazpacho ingredients into a high speed blender or food processor and blitz until the mixture comes together and creates a smooth, soup like texture - you may need to add a dash more almond milk until you reach the consistency you like best.

Once smooth, you can store this in the fridge until needed or serve straight away. We like to top it with some sliced spring onion, chopped plum tomatoes and a crack of black pepper.
