Preheat oven to 200°C fan / 390°F. Place the squash, carrots, onion, garlic and ginger into a baking dish. Drizzle with olive oil, sprinkle with ground cumin and a pinch of salt and pepper. Toss everything together then place into the preheated oven and bake for 30–⏱️ 35 minutes, stirring halfway through, until tender and beginning to brown.
