Roasted Cauliflower With Butter Bean Mash

Preheat oven to 180°C fan / 400°F. Cut the leaves off the cauliflower and place in a large bowl. Cut the cauliflower into small florets, finely slice the stem and add to the bowl with the leaves. Add 1 tablespoon of olive oil and toss so that everything is coated.

Arrange the cauliflower stem slices and florets on a flat baking tray and bake for 20–⏱️ 25 minutes until golden. Add the leaves and roast for another 4–⏱️ 5 minutes until the leaves are crisp and the florets are soft.

Put 150g / 5.3 oz of the roasted cauliflower into a food processor with 1 tablespoon of olive oil, butter beans, mustard, vinegar, garlic, lemon juice, rosemary and oat milk. Blitz to a smooth mash-like consistency and season to taste.

To serve, spoon the mash onto a platter, top with the remaining cauliflower florets and the crispy leaves; then finish with a sprinkling of extra rosemary and a drizzle of olive oil.
