Roasted Red Pepper Hummus
This red pepper hummus is a lovely option if you’re a hummus addict and want to spice up your classic recipe! The sweetness of the roasted peppers really adds another layer to the chickpea and tahini base. I love serving it as a side at dinner time, with some roasted veg and olive oil added to the bowl to make it beautiful.

Preheat the oven to 220°C / 200°C fan / 400°F.

Place the peppers onto a baking tray with a drizzle of olive oil and roast for ⏱️ 25 minutes until soft and blackened in places, adding the garlic clove for the last ⏱️ 5 minutes.

Once cooked, remove and leave to cool.

When the peppers and garlic are cool, place all of the ingredients into a food processor and blend until smooth and creamy.
