Simple Marinated Avocado & Miso Salad
This simple salad is so easy to make and packed full of flavour. We love to serve it alongside fluffy quinoa and an edamame bean dip, but it's also great enjoyed by itself or mixed with chickpeas and sunflower seeds.

Start by marinating the avocado. Slice the peeled avocado into quarters or large chunks and place into a small bowl.

In another bowl, mix together the sesame oil, tamari, lime juice and miso paste. Pour over the avocados, cover and leave to marinate in the fridge for at least ⏱️ 1 hour.

Once ready to serve, make the dressing. Place all of the dressing ingredients in a small bowl and pour in the marinating liquid from the avocados (you should have about 2–3 tablespoons). Mix well until a thick, dark dressing forms.

Place a large handful of rocket onto a serving plate and top with the marinated avocado. Spoon over the dressing and sprinkle with sesame seeds and chilli flakes.
