Simple Quinoa, Pesto & Tomato Salad
This simple salad is packed full of flavour and fresh ingredients. We love to make a big batch of our roasted almond pesto and mix it through, but you can use whatever pesto you have at home.

📝 Preparation Steps

Cook the quinoa according to packet instructions. Once cooked, drain and spoon into a large mixing bowl.

Toss through the pesto, lemon juice, drained chickpeas, chopped cherry tomatoes, sliced red onion, rocket, sliced spring onions and a large pinch of salt. Mix well until everything is coated.

Once ready to serve, spoon the salad into bowls and top with a pinch of pepper.
