Sundried Tomato & Caper Potato Salad
This salad is packed full of flavour from a mixture of capers, sun-dried tomatoes and olives. It's perfect served along side warm stews, roasted veggies or even just a mixture of delicious salads.

📝 Preparation Steps

Place a pan of salted water over a medium heat and bring to the boil.

Once boiling, add the potatoes and boil for ⏱️ 20 minutes until soft. Once cooked, remove from the heat and run under cold water.

Once the potatoes are cool, place them in a large bowl, along with the olives, sun-dried tomatoes, capers and chives.

Mix together the apple cider vinegar, 2 tablespoons of the oil from the sun-dried tomatoes jar (or olive oil), mustard and a large pinch of salt.

Pour the dressing over the salad and mix well.

Top with a good crack of fresh black pepper before serving.
