This recipe is the ultimate plant-based version of mac & cheese. Macaroni pasta is mixed through a creamy mustardy white sauce with chopped spinach. Sprinkled with breadcrumbs and nutritional yeast, it's then baked in the oven to create an irresistibly crispy topping.

Preheat oven to 200°C / 180°C / 390°F.

Cook the macaroni pasta in salted water according to packet instructions, adding the chopped spinach for the final minute or so. Once the spinach has wilted and the pasta is cooked, drain and leave to one side until needed.

To make the white sauce, place the tapioca flour, lemon juice, 3½ tablespoons of nutritional yeast, mustard, almond milk and a pinch of salt into a pan over medium heat. Cook until the mixture begins to bubble, whisking continuously to ensure that the mixture stays smooth and doesn’t form any lumps. You may want to add a dash more almond milk if the sauce becomes too thick.

Once the sauce comes together and is piping hot, stir through the pasta, grate in the garlic, season to taste and spoon into a baking dish.

To make the topping, place the bread and 1 tablespoon of nutritional yeast into a food processor and blitz until the mixture reaches a breadcrumb-like consistency.

Scatter the breadcrumb mixture over the top of the macaroni and cook in the oven for 5–⏱️ 10 minutes until the top turns golden.
