Tomato & Red Lentil Curry
This red lentil and tomato curry is a quick recipe to pull together for a simple and delicious dinner. The tomatoes are cooked in garlic and spices, before the red lentils are mixed through with coconut milk and lime juice.

Place a large pan over medium heat and add a drizzle of olive oil. Once warm, add the onion, garlic and a large pinch of salt. Cook for ⏱️ 5 minutes until soft.

After ⏱️ 5 minutes, add the spices and cook for a minute or so before adding the tomatoes. Cook for 5–⏱️ 10 minutes until the tomatoes begin to break down.

At this point, add the red lentils, brown rice miso paste, coconut milk and lime juice. Mix well and leave to simmer for 25–⏱️ 30 minutes, stirring occasionally, until the red lentils become completely soft. If the curry ever becomes too thick or starts to stick to the bottom of the pan, add a dash of almond milk and mix through.

Once the red lentils feel soft, mix through the spinach and as much of the almond milk as needed in order to loosen the mixture but still retain a thick, creamy texture.

Cook the curry for a few further minutes to heat through and allow the spinach to wilt.
