Preheat the oven to 180°C fan / 400°F. Place the tofu on a baking tray in a single layer, drizzle with olive oil and sprinkle with salt and pepper. Toss to coat. Place in the oven and bake for ⏱️ 15 minutes, adding the kale for the last 3–⏱️ 4 minutes until crispy.

While the tofu cooks, place a medium saucepan over medium–high heat and add a drizzle of olive oil. Add the chopped onion and garlic, with a sprinkle of salt and pepper. Cook, stirring occasionally, for 5–⏱️ 6 minutes until softened and translucent. Then add the turmeric, stir well, and cook for a further minute.

Next, add the coconut milk, then fill the empty tin with water and add to the pan; repeat to add 500ml / 17 fl oz of water. Add the rice noodles, poking them down gently to ensure that they're submerged in the liquid. Cover and cook for 10–⏱️ 12 minutes. Stir through the miso and lime juice; season to taste.

Serve in bowls, topped with crispy kale and tofu; sprinkle with chopped chilli and sesame seeds, and lime wedges on the side.
