Preheat oven to 200°C / 180°C fan / 400°F and place the cauliflower and tomatoes onto a flat baking tray. Drizzle over 1 tablespoon of olive oil and rub into the vegetables to coat. Season with a pinch of flaky sea salt and black pepper. Roast in the oven for ⏱️ 30 minutes until the vegetables are almost cooked through.

Place the lentils and kale into a large bowl; pour over 1 tablespoon of olive oil and then gently massage the oil into the kale and lentils. Set aside.

Meanwhile, mix the dressing ingredients together in a small bowl with a large pinch of flaky sea salt.

When they’re ready, tip the roasted vegetables into the bowl and pour over the dressing. Toss together so that everything is coated and the kale wilts in the heat.

Serve the salad in bowls, topped with the pumpkin and sunflower seeds.
